In the research process, take the com starch as the primary data, carried on saccharification processing to it, the obtained saccharification product as the carbon source when the beer yeast needs; Take the corn albumen as the supplementary material, in the experiment increase its enzymolysis product (mainly is alpha - amino nitrogen), the nitrogen source when the beer yeast needs. Reasonable mix and configurate the com starch saccharification and the corn albumen enzymolysis product, increase the mineral substance and adjust pH, the vaccinate beer yeast and ferment the beer of high degree.Determines the best parameter of production craft through the orthogonal experiment.From com starch liquefication craft, thesaccharification craft, the corn albumen hydrolisis craft, the decolorization craft, culture medium of beer yeast configuration craft, boiled aspect and so on as well as fermentation process, technical questions are carried on comparing the systems to discuss, obtains the good test result.The present paper primary coverage is as follows:1.
