In this paper, chromogenic reaction (Hydrochloric acid-Magnesium powder,Neutral Leadacetate,ferric trichloride) and the characteristic spectrum of the pigment of SI-LI-HONG PeanutSkin in different condition of baked (60℃and 100℃) was studied; With the different solvent,the different pH, the time of withdraws, the temperature, the solvent and extraction times, thesingle factor experiment was carried. The three factor of the temperature, the time and thesolvent of withdraws were studied to compare orthogonal experiment L9 (34) andtribasic-quardratic regression ortational combination design. The result indicated that thepigment of SI-LI-HONG Peanut Skin belongs to flavanone class pigment and the characteristicspectrum is 493nm; The single factor experiment indicated that the best condition of extraction is50% ethyl alcohol, in pH 7, the temperature is 40℃, the extraction time is 30 minutes, thesolvent is 1:20, the grade of extraction is 2.The result also indicated that the optimal abstractionproject of orthogonal experiment L9 (34) is the temperature is 40℃, the extraction time is 30minutes, the solvent is 1:25; the optimal abstraction project of tribasic-quardratic regressionortational combination design is the temperature is 40℃, the extraction time is 30 minutes, thesolvent is 1:30.The comprehensive result indicated that the best condition of extraction is 50%ethyl alcohol, in pH 7, the temperature is 40℃, the solvent is 1:20, the extraction time is 30minutes, the grade of extraction is 2.Simultaneously, the stable factors of the pigment of SI-LI-HONG Peanut Skin were studiedin different pH value (1~12),the light(natural light in room, evaded light), the differenttemperature (30~90℃), the oxidant and the reducing agent (H2O2 and Sodium Pyrosulfite),the sucrose, the salt, the Vc, the citric acid, the antiseptic (benzoic acid and sorbic acidpotassium), the common metallic ion(Cu2+,Mg2+,Zn2+,Ca2+,K+,Fe2+,Al3+ and so on).Theexperimental results indicated that the pigment of SI-LI-HONG Peanut Skin is stable tothermally, the absorbance is less affected by the sucrose and the salt; the absorbance may causeto drop by the oxidant and the reducing agent,the Vc, the citric acid and the benzoic acid; theabsorbance can caused to rise by the sorbic acid potassium. As for the metallic ion, theabsorbance may cause to be increased by Cu2+,Ca2+,K+ and Al3+,but the absorbance was littleeffected by Mg2+ and Zn2+,and the pigment solution became black by Fe3+.
