In the global environmental degradation and the increasingly serious energy crisis today, alcohol can be used as a green energy, is becoming a national energy development in the strategic direction. With ethanol gasoline in China gradually extend, for fuel China's rapid increase in the demand for alcohol. Using the traditional fermentation methods which are use corn, wheat and other grain have some shortcomings which are great demand and high costs to grain. The shortcomings that gradually become apparent have been unable to meet the needs of the market. Particularly, China is a big country, food security is the major issues which is related to people's lives and social stability. Therefore, the method of non-grain raw materials turn into ethanol fuel production has been promoted and supported greatly by Chinese government in "11th Five-Year" plan. The method of using sweet sorghum as raw material juice fermentation alcohol compared using starch production of raw materials with energy conservation, low production cost and pollution-free advantages. Therefore, the use of sweet sorghum juice fermentation production of alcohol has broad market potential and economic value.The tests of sweet sorghum as material fermented alcohol fuel production use the Co-158 yeast:1. The effects of Co-158 yeast at different temperatures, pH and the inoculation on the growth curve were studied through the experiment. The experiment results showed that Co-158 yeast suitable for the growth of yeast temperature is 30°C, the optimal growth pH value is 5.0, the optimum amount of inoculation is 10%.2. The nitrogen source and different inorganic salt of alcohol fermentation was obtained from the single factor experiment, and the optimum fitting combinations get from the four factors and three levels of the orthogonal fitting are:(NH4)2SO4 6g /L, MgSO4 6g/L, CaCl2 10g/L, KH2PO4 0.3g/L.3. The optimum technology of sweet sorghum juice fermentation production of alcohol was obtained from the single factor experiment, and three factors and three levels of the orthogonal fitting are: fermentation temperature 36℃, pH 4.5, inoculation amount10%.4. Sweet sorghum juice as raw material for Co-158 yeast of 10L fermentation test, using the sub-control fermentation methods: in the bacteria increasing period, control 30℃,pH 5.0,ventilation 75L/h,quantity to the optimum conditions for the yeast growth. Make the number of yeast rapidly increase to the maximum to shorten the fermentation time, then change to the optimum fermentation conditions to get the most out of fermented alcohol concentration. The time to end the fermentation was 28 hours and the alcohol volume can reach 9.7 % (v/v).5. The method of using sweet sorghum juice to ferment alcohol production compared with the traditional method of corn fermentation, the test proved its advantages that low production costs, saving energy and the short fermentation time.
