Our country has long coastline and is affluent in seashell resource. The oyster, which is called "Sea milk" and "Puzzle seafood", is increasingly greeted by people for its peculiar nutritive value. Recently the development on seashell resource like oyster in our country is focus on processing its esculent part and a great deal of seashells become garbage. And the organics in the abandoned seashells decomposed and contaminated the environment after piling for long time. Since the utilization of shucks is not enough in our country. How to use shuck effectively and change waster into usefulness is the direction and purpose of this paper. So the systematic research had been carried on in the utilization of shucks.Firstly, the new technology of producing calcium propionate from oyster shell under normal pressure and temperature was studied. Meantime the magnified experiment was researched, which provided theory reference and reliable parameters. Compared with traditional production process, the virtues of this process are didn't need to be calcined under high temperature, the biological activity of shucks was maintained, mild condition, free from contamination and easy to control. In addition, it won't cause pollution to the environment. So the process was an environmental friendly technic and it had a good environmental benefits, social benefits and promotion prospects.Secondly, in the optimizing process of calcium propionate production conditions, this paper brought Response Surface Methodology (RSM) in to use firstly. The effects of main factors were discussed and achieved the optimum production condition through the monofactor and RSM test. The results were as follows: the shucks were comminuted through 100 screen, the solid-liquid ratio was 16.7, the shuck-propionic acid quantity ratio was 1.08, the reaction time under normal temperature was 172 min, pH of solution after reaction was 7-8, the counteract time was 38 min. Using the new technic, the yield of calcium propionate reached 98.16%, the content of calcium propionate reached 99.61%.
