This paper focused on how to get dietary fiber additive from lotus root by-product by a medicinal fungus.The different degradation of lotus root by 56 fungi in liquid and solid culture medium. The content of dietary fiber and hydroxyl radical scavenging efficiency.The results indicated that Boletus edulis Bull.ex Fr. was better for degradation. Under the conditions, yield rate reached 63.9%. The content of dietary fiber in the product was 82.9%, and the soluble dietary fiber got 12.5%. The hydroxyl radical scavenging efficiency reached 70.1% on 20g/L.The opotimal experiment showed that the optimal culture medium contented lotus root knurl∶lotus root peel=1∶1, water 1.88mL/g, KH2PO45.63%, cotton cypress3.75%, corn powder 2.50%, and optimal culture condition was 27℃, strain age 2days, inoculum 10%, culture time 10days. The yield rate was 59.89%. Under the opotimal condition the content of dietary fiber in the product was 84.00%, and the soluble dietary fiber reached 24.50%, and the hydroxyl radical scavenge rate could reached 60.85% on 20g/L.The physics and chemistry characters of fermenting residue were investigated. It showed that expansibility capacity arrived 5.0mL/g, water-holding capacity raised from 1.81g/g to 2.15g/g, and water-binding capacity raised from 3.97g/g to 4.01g/g.On the study of fermentation process and component diversification, the results inferred that the degradation and transform principium may be cellulose and hemi cellulose in the crude material was degraded. It could improve the component of coarse-fibre and change the character of the product. Simultaneity, increased fungin in the culture system. Influenced the intrinsic constitute. Made the content of soluble dietary fibre highly increased.Containerized culture was a traditional blow up cultivate measure of edible fungi. In this paper we chose to blow up 20 times. On the condition of optimal culture medium and synthetic condition. The product content got 58.91%. Ultimate content of dietary fiber in the product got 80.30%, and soluble dietary fiber got 20.90%. Hydroxyl radical scavenge rate could get 58.98% on 20g/L.Compared the content and characteristic of dietary fiber produced by acid & alkali, enzyme and medicinal fungi fermentation using lotus root by-product.17.33%,48.28%,59.23% material was respectively obtained. On the concentration of 20g/L, hydroxyl radical scavenge rate could get 0, 16.06% and 60.85%. It would be concluded that the fermentation process of degradation and transform was kindly. Cellulose and hemi cellulose was degraded , at the same time the oxidation resistance and mycelium active component could be reserved.This study provides a new way on academic foundation to intensive process farming by-product by biotechnology. Using lotus root by-product, increased accessional value, formed the ecotypic industry chain, advanced the technical level of lotus root industry, and then bring along the whole domain.
