Our country is one of the most important countries of tilapia culture and export-prcessing. During the processing, a large number of byproduct was produced. However, most of them were not ut ilized properly. In this thesis, ultrafiltration technique,sephadex column chromatography and chelation technique were used to produce functional peptide from the enzymic hydrolysates of tilapia skin collagen (TSP-I) ,then the property of TSP-I was determined.In this way,not only fish skin collagen can be recycled, enlarge resource of functional peptide,widen its practical rang, but also avoid environment pollution of fish processing wastes like fish skin. Such a practice has great value in economy and social benefit.TSP-I is Tilapia skin collagen hydrolysates, which was developed by our laboratory in earlier stage. It was chosen as the experiments materials. The main content of this research is as the follows:1. The nutrients and physicochemical property of TSP-I was analyzed in the dissertation. The analysis of physicochemical properties laid a foundation for further processing on TSP-I.2. TSP-I solution was chosen as the ultrafiltration treatment materials on getting the peptides hydrolyzed after 9000Da ultrafltration(TSP-II),the peptides hydrolysed after 5000Da ultrafltration(TSP-III) and the peptides hydrolyzed after 3000Da (TSP-IV).The antioxidant capacity and reductive activty of tilapia skin collagen hydrolysates of different molecular weight were compared.3. TSP-I and protein hydrolysates after 9000Da ultrafltration were used as materials to synthesize zinc peptides compound chelate. The preparation method of zinc peptides compound chelate was obtained by ultrafiltration method and water-bath heating method.The optimum preparation conditions of the two methods were obtained. Product was testified by IR and the determination of the antioxidant capacity.4. ACE inhibitory peptides and DPPH·scavenging peptides having high activities were separated by ultrafiltration technique and sephadex column chromatography, Sephadex column chromatography was used to determine molecular weight distribution of TSP-II .Finally, the peptides with ACE inhibitory activity and DPPH·scavenging activity were obtained,giving theory basis to producrion and utilization of it.
