Taking Ziyang green tea and mulberry vinegar as main raw material, a new type of functional beverage named green tea mulberry vinegar was developed on this paper. The physicochemical properties, total antioxidation and free radial scanning ability compared with drinks sold on market, Weight Reducing Function and Serum Lipid Reducing Function through experiment in mice were tested. The results were as follows1. The content of total acids of green tea mulberry vinegar (counted by acetate acid), amino nitrogen, Reducing Sugar (counted by glucose), Ethanol, and total ester (counted by ethyl acetate) reached 5.76g/100mL, 0.09g/100mL, 1.26g/100mL, 0.32g/100mL and 1.18g/100mL respectively.2. There is no obvious difference between acid-base titration and pH value measurement on mulberry vinegar Acidity. The mulberry vinegar acidity was sinigicant different with different concentration and there is good linear relationship between vinegar Acidity and pH value.3. The mulberry vinegar and other vinegar are both have the (02-·)and DPPH·scanning ability while the scanning ability of mulberry vinegar is better than other vinegar.4. The optimal combination of 5L green tea mulberry vinegar are as follows: green tea 50g, mulberry vinegar 360 mL, crystal sugar 100g, Citric Acid 10g and purified water 4.6L. This beverage has the feature of reish brown colour and transpent, tasted soft, compoud aroma of greed tea and mulberry vinegar, homogenious turbidity and no impurity that can be seen.5. The green tea mulberry vinegar has the highest total antioxidant capacity (TAC) while the apple vinegar beverage has the lowest TAC. The TAC of Kangshifu green tea and Wahaha green tea is equal with Wahaha green tea a little higher.6. The research of free radical scanning ability of green tea mulberry vinegar shows that green tea mulberry vinegar, Wahaha green tea, Kangshifu green tea and apple vinegar beverage all have the 02-·scanning ability while the green tea mulberry vinegar has the highest of it. The 02-·scanning ability of Wahaha green tea and Kangshifu green tea are both higher than the apple vinegar while they have no significant different scanning ability between each other. Green tea mulberry vinegar, Wahaha green tea and Kangshifu green tea all have strong DPPH·scanning ability and the scanning ability of green tea mulberry vinegar is significant higher than the other two. The clearance rate can achieve 95.38% when the amount of it is 40μL. The DPPH·scanning ability of apple vinegar is relatively lower.7,The animal test shows that the rats'body fat and fat coefficient of weight reduction and blood lipid lowering model are sifnificant higher than the control, which means that the model was established successfully. Compared with the weight reduction control group, the rats'body fat and fat coefficient group of green tea mulberry vinegar decreased obviously, compared with blood lipid lowering control group, the rats'body fat and fat coefficient also decreased significantly which means that MVBGT have significant effect on weight reduction and blood lipid reduction.The content of total Cholesterol, Triglyceride and serum high density lipoprotein on hyperlipidemia control group is significantly higher than the normal control group which means this model was established successfully.The content of total Cholesterol, Triglyceride and serum high density lipoprotein on the blood lipid decreasing group was significant lower than the high blood lipid control group which means that green tea mulberry vinegar has obviously blood lipid lowering effect. The content of total Cholesterol and Triglyceride on the fat control group was significant higer than the nomal control group which shows that high fat diet also can induce the content of total Cholesterol and Triglyceride rising. The content of total Cholesterol and Triglyceride on the weight reduction control group was significant lower than the fat control group which means that green tea mulberry vinegar has obviously blood lipid lowering effect on fat rats.The organ ratios of spleen/body, liver/body and brain/body of high blood lipid control group and green tea mulberry vinegar blood lipid decreasing group were lower than the nomal control group while testis/body and renal/body were a little higher than it, but had no significant change. Brain/body did not change significantly. All those date above are within the normal range which means that the green tea mulberry vinegar beverage has no side effect on rats.
