Human milk is the natural ideal food for infants.In special case,cow milk seems to be the best alternative food for infants because it is affluent in nutrient.There are some important differences of protein construction between human milk and cow milk.Cow milk protein is not easily digested and absorbed.Parts of infants are sensitive to it.The proportion of casein and whey in the current infant formula is adjusted through adding a large of desalted whey powder.But the indigestible and irritable constitutions are still active.The digestibility and nutrient of the fat are different because of the form of the fatty acid.The lower fatty acid or the unsaturated fatty acid is digested and assimilated more easily than the higher fatty acid or the saturated fatty acid.Owing to the different fatty acid sort,the milk fat is digested and assimilated much harder than the breast milk.As the level of the lower fatty acid of the breast milk is higher than milk,the digestibility of the breast milk is tower above 20%-25%.In the experiment,we use the soy protein isolate to replace the desalt whey powder.No matter accorded with the protein content,but also realized the amino acid modal humanization,and reduce the cost.We chose the corn oil,soy oil,palm oil as the materials to match the fat content.To make the content and the proportion of the lower fatty acid and higher fatty acid,linoleic acid and linolenic acid as like as the breast milk.We use EXCEL to design the new infant formula and check the milk powder sample.The single factor experiment and the perpendicular experiment are used to ascertain the dosage of the soy protein isolate and the lipid.At last,we firm the new infant formula,there are 64.32%of milk, 2.50%of soy protein isolate,6.0%of soy oil,7.0%of corn oil,1.20%of palm oil,19.0%of functionality oligosaccharide.There is no desalt whey powder in it.We used automatic amino acid analyzer and fluorescence colorimetry to mensurate the content of amino acid.The gross is 19.42g/100,much more than 8.154 g/100g of the breast milk.The relativity of this new style infant and the breast milk is well;the coefficient of correlation is 0.9588.The fatty acid level is set out by GC-Mass Spectrometry and capillary gas chromatography. The unsaturated fatty acid is 59.352%from the total fatty acid;the other 40.649%is the saturated fatty acid.The proportion of the lower fatty acid and higher fatty acid is 1.4601,measures up the proportion of 1-1.5:1;and the proportion of the linoleic acid and linolenic acid is 10.2865, measures up the proportion of 8-11:1.The content of the linoleic acid is 24.60mg/g.The animals digest experiment is used to evaluate the digestibility of the protein by testing the dissolubility amino nitrogen level of the gastric juice and the intestinal liquid which we get from the mice after they ingest the new infant formula.The digestibility of the new infant formula is better than the infant formula in sold.The invitro simulate test is also used to evaluate the digestibility of the protein.The results show that,the digestibility of the new infant formula is 78.56%,much higher than 73.83%of the infant formula in sold.The sensory value of infant formula milk powder showed that it had the pure aroma of cow milk and light vegetable oil smell,ivory-white,equal texture,without agglomeration.The microbiological examination was up to grade.
