High-gravity Alcohol fermentation,by which ecomical effect is abvious and large scale rustruction on new equipment is innecessary,has advantages of improving fermentation level and equipment efficency while reducing energy cost and pollutants.According to the metabolism pathway of yeast,this article focus on the study of alcohol high gravity fermentation factors such as:nutrient condition and stressing factors,optimum fermentation condition,pilot plant trail.Fermentation conditions of FYW35 has been studied:such as batch–feeding,nitrogen,adding O2, pH, fermentation temperature, inorganism iron (surpher,patesium,zinc, ca lsium and sodium), organic acid, CO2 and alcohol toxin releasing;Optium conditions were selected by orthogonal experiment,which were as follows:of material / water 1:1.8,60℃pretreat 30 min,90~95℃liquefies 60min,no sacchifrcation, peching rate 10%,pH5.5,10 u/g acidfied proteinase,75rpm shaker,35℃fermentation for 60~70h.optimn condition can get 16.4%(v/v) alcohol with utilization rate,16.7% and 6.8% higher than traditional processing.; 500L pilot plant trail is implanted with 1:1.8material:water) ratio,90~95℃cooking,35℃fermentate for 60~70h;16.4%(v/v) alcohol is got with 1% residue sugar and 90% starch utilization rate.FYW35 is a fast producer.The inavation point of this paper was indentified as follows:1.According of the theoratic of glucose inhibition,low concentration and feeding of sugar processing is selected;2.Brabender viscometer is used to analysis gelfnlization curve of corn starch a 60℃pretreatment processing is selected.
