Shandong cuisine is the precious riches of Chinese food culture. And it is the dish that has the biggest influence and spread widely of the eight major components of Chinese cuisine. And it is representative of the culinary in the area around the Yellow River valley. Shandong cuisine is well-known for its long history,solid cultural foundation and consummate cooking skills,and is held in high regard both at home and abroad. Shandong cuisine is particular about"eating don't mind exquisite,and minced meat don't mind careful".No matter of making wheaten food,cold dish and hot dish,or menu program and the richness of the diet phenomenon, Shandong cuisine embodies folk custom.Shandong cuisine takes the shape of assimilating the advantage of Shandong cookingartistry,and the featureof each locality special the flavour and develops it.And it has developed over a long period of time since it came into being. Since the 80 ages of last century,our government regards the cooking art of Shandong cuisine as the national cultural heritage,and takes the policy of carrying on.But these years,along with the growing passion for Sichuan cuisine and the rising of various dishes, Shandong cuisine seemingly faded away from our view.Why Shandong cuisine,the most famous one of the eight famous styles of cooking in China,fell behind during the process of reorganization of these eight styles?Through surveying and studying,we find that these are many reasons,such as the regularity of the things' development,the change of people's taste and the difficulties Shandong cuisine meet during its developing. But we realize at the same time that Shandong cuisine is returning. The reasons are easy to see. The profound culture of Shandong cuisine and people's missing and knowledge of it promote the retuming. And after tasting many kinds of novel flavor,people rechoose Shandong cuisine because of its moderate taste by making the five tastes in harmony.This essay discuses the measurements to carry on the culture of Shandong cuisine and promote the development of it according to the study of its history and present conditions. This essay also talks about the process of Shandong cuisine from different perspectives and how to make people reknow it to accelerate its development.Through analyzing,I think that the development of Shandong cuisine is inevitable. The culture of Shandong cuisine is rooted in Shandong and is spread to other areas in China and even in the globe. The study of carrying on and developing Shandong cuisine finds a way to protect and improve nonmaterial culture and we can learn a lot from it.
