The inside and outside color value sugar was the most important quality target.The main materials caused color in the sugar were hydroxybenzene,amino nitrogen,iron,therefor reducing these contents in the sugar had very important meaning in decreasing the color value and promoting the quality of sugar. In recent years,our country focused on the food security very much ,especially on the sulfur dioxide in the food , so that decreasing the contents of sulfur dioxide in the sugar was also gradually stressed.As we knew, the researches on the colored materials were almost focued on the clarifing process, but there were few reports about reducing the colored materials in the pan-processing. We studied the methods to remove materials caused color in the sugar in the pan-processing and the experimental results in this reserch were significant to develope new technologies and new methods to control the colored components of sugar.The effects of sucrose ester,chitosan and complexing reagent to tyrosine,tannin,iron(â…¢) and sulfur dioxide in the sugar had been researched under laboratory condition and the concentration of additives, temperature, pH value of additives to the main colored contents of sugar were studied.Through a series of one-factor experiments,orthogonal experiments and the compand effect of different additives, the best the concentration of reagent, temperature, pH value were selected. In the basis of the previous experiments, we had studied ultrasonic technology to removal effect of the remainder of iron(â…¢) in the pan-processing. In the last part of research , the compand effect of complexing reagent and ultrasonic technology to the remainder of iron(â…¢) in the sugar had been researched.In the research,we find the compand effect of tartaric acid and sucrose ester could reduce the remainder of iron(â…¢) in the sugar crystal,the removal rate was 68.48%; ultrasonic technology and the compand effect of complexing reagent and ultrasonic technology could the remainder of iron(â…¢) in the sugar crystal, the removal rate was 71.4%;Chitosan and sucrose ester could reduce the remainder of hydroxybenzene, the removal rate was 43.2% and 36.3%; Sucrose ester could reduce the remainder of sulfurdioxide in the sugar crystal.
