In this thesis,the analytical methods of acrylamide were reviewed.The basic degradation principle and characteristic of polyacrylamide were introduced. The following aspects were investigated:1.The sample preparation method for the determination of acrylamide in sugarA variety of factors that effected on the recovery of acrylamide from sugar have been investigated,including the choice of solid phase extraction(SPE) cartridge,the ability of column capacities,elution solvents,volume of elution solvent and injection mode.The results showed an excellent guide for the following analysis was achieved.On the best conditions,the average recoveries of acrylamide from sugar were more than 90%.Excellent percentage recoveries were obtained according to the present method.2.HPLC-UV and HPLC-MS/MS methods for the determination of acrylamide in sugar were developed by using NH2 column.Compared to conventional analytical methods using C18column,sucrose has a stronger retention and eluted out after acrylamide in case of Spherisorb NH2 column.As a result,it can reduce the matrix interference greatly.Thereby,the new method supplied a helpful determination procedure of acrylamide with elimination of sucrose interference effect and shows high sensitivity,good linearity over a wide range and good reproducibility.3.Several factors that induce the degradation of polyacrylamide have been investigated.The results indicate that soluble oxygen,reducing metal ion and hydroxybenzene compounds can promote the degradation of polyacrylamide obviously on high temperature.4.A HPLC-MS method for anlysis of degradative products of polyacrylamide in sugar was developed by combining with liquid-liquid extraction technique.
