Shan'xi, called as "The origin of flour food ", is the cradle of Chinese flour foods. But the research on the culture is so scattered compared to its profound details. At the same time the situation about consuming flour food in north China is rarely noticed. Noodle is one of the traditional foods in China. Because of its simple process flow and delicious taste, it is very popular in different regions of China. In the past few years, studies on wheat flour noodle have developed rapidly. But there is few basic studies on naked oats noodle. So it is urgent to develop more kinds of naked oats noodle to meet people's need.Systemic information about Shan'xi flour food culture has been coordinated clearly, and the notion of southern China people on how to keep healthy by eating flour food is also analyzed. And we can see that the eating habits of flour foods can be changed by some proper methods in south China. Finally process flow of naked oats noodle and factors of quality control were studied. The result showed that the optimal technological parameters: the ratio of naked oats flour and wheat flour was 3:7, water was 40%, curing time was 20minutes.
