As the raw material of naked oats and appropriate proportion of japonica manufacture the mixed convenient rice.Through hot and damp treatment,drying,additive treatment, index with gelatinization,rehydration,sensory assessment, investigate the naked oats mixed convenient rice process by a single factor experiment and utilize orthogonal test.Test result shows, the best proportion of naked oats and japonica is 1:2, then convenient oats rice has good luster, very smooth, chewy, concentrated oats flavor and color uniformity.The best hot and damp treatment is that at 35℃of constant temperature to immerse 30 min, proportion of rice and water is 1:1, steam boiling pressure is 0.05 MPa, cooking time is 10 min.Under the optimum condition facilitates the convenient oats rice the rehydration rate is 2.20, the gelatinization degree is 91.2%, the sensory assessment is 27.1, the integrated value is140.3.By hot and damp treatment the rice cooking process may best.The best drying process is that after cooking the rice, then full separation and drain, apply 480 W microwave drying for 8min,and then 80℃hot air drying for 70min.Under this processing condition, water content of the convenient oats rice is 9.12% , the rehydration rate is 2.28, the sensory assessment is 30.1, the integrated value is 52.9.The best additive treatment is that add 0.3% weight of uncooked rice sucrose ester and monoglycerides (1:1),0.10%β-cyclodextrin during the cooking process. Under this processing condition, the gelatinization degree of the convenient oats rice is 95.8%, the rehydration rate is 2.50, the sensory assessment is 37.8, the integrated value is 158.6; Put the gelatinized rice by drain treatment into 3 times and 50℃pectinase solution to immerse 25 min during the discrete immersion, and enzyme dosage is 78 U/100g.After immersing of the pectinase solution, the rehydration rate of the convenient oats rice is raise from 2.50(no enzyme) to 2.91.
