Monascus pigment is a natural product for long history in China.It is an important additive in agriculture and industry,some derivatives were developed in order to improve its properties,The molecular structure of Monascin derivatives was designed by molecular mechanics and molecular dynamics simulation.On the other hand,the simulation results were validated by experiments.The raw materials of water-soluble Monascus pigment was separated and purified.In the extraction of pigment with TLC,extraction,ultrafiltration and ion exchange methods and comparing to the yield of pigment,it was showed that ion exchange can be better achieved in the effective separation of yellow and red fraction in Monascus pigment,and only one red pigment was prepared,its most wavelengh present in 490nm.On the fundament of water-soluble Monascus pigment,preparation methods of Monascus pigment derivatives were investigate,and select of the reaction within Dichloromaleic anhydride was determined.The hydrophobic Monascus pigment was prepared,it's property was characterized with HPLC.In the preparation,the hydrophobic of Monascus pigment was improved,but it would not directly dissolved in oil.After further tests,the oil suspension of Monascus pigment was prepared by the instead of solvent.The results showed that the stability of Monascus pigment derivative against sunlight was little higher than water-soluble Monascus pigment and it would still be faded under the Iong-term exposure in sunlight.However,the stability of the new ramification against heat was excellent.
