This research made use of the Tianshui emerald artichoke as research object. Using the single factor and the orthogonal test, essential technology and parameter of artichoke cans were studied, technology and formula of artichoke cans were confirm. Using highly effective liquid phase chromatograph and the ultraviolet/obvious spectrophotometer to examine nutrition, the physics and chemistry, the microorganism of artichoke canned food, the examination was comprehensive and systemic. Using gas phase chromatograph, microwave to dispel-atomic absorption spectrophotometer and ion chromatograph to examine the harmful substance remains (organchlorine pesticides, gorganophosphorus pesticides,heavy metal as well as nitrate and nitrite). The findings are as follows:1.Using L9(34) thogonal experiments,a series of the best technical parameters were selected: calcium chloride was 0.20%, lemon acid was 0.04%, EDTA-2Na 0.20%, vitamin c was 0.15%.2.Using L4(32) cooking liquor thogonal experiments,a series of the best technical parameters were selected: different Vc sodium 0.5%, citric acid 0.5%, sodium chloride was 15%.3.Technology and formula of artichoke cans were confirm. Main parameter: the temperature of prepare boiling was 95℃, the time was 5'-15'minute; exhausting with heating, the canned food center temperature achieved 80℃, sealing immediately and the seal vacuum degree controled 0.05~0.07 MPa. temperature of sterilizing was 100℃, time was 20 minute. The final product was tender yellow and the cooking liquor was clear, having the few lamellae or the detritus; The Product had the artichoke canned food'proper taste and the cool tasty fragrance, it did not have the unusual smell; The organization was delicate.Degree of hardness was moderate,without the crude fiber,the shape in same pot was identical and the receptacle the assumed hemispheroid, having the few detritus, withoute the impurity. The product quality has achieved profession standard Q/TCS03-2006.4.Tianshui artichoke canned food included water 87.4 g/100g, protein 2.75g/100g, ash 0.80 g/100g, VA80.24 mg/100g, B18.26 mg/100g, B218.25 mg/100g, B30.82 mg/100g, VC9.05 mg/100g, P 68.35 mg/100g, Ca 50.90 mg/100g, Cu 0.241 mg/100g, Fe1.37 mg/100g, Zn1.19 mg/100g, but also included health care ingredients ,inulin and so on Health care ingredient. It included effective component: Vegetable setose thistle element, Cynarin, Kind of flavanone element, Quassin and so on. nutritions are comprehensive and rich. Compares with the fresh artichoke, nutrient content had no remarkable difference(P﹥0.05).5.With a gas phase chromatography entering the sample with one time, Bromine cyanogen chrysanthemum ester, chlorine cyanogen chrysanthemum ester and cyanogen fifth heavenly stem chrysanthemum ester and so on 3 kinds of organchlorine pesticides as well as the phosphate insecticide, the methylamine phosphorus, the acetyl methylamine phosphorus, the rogor, kill the snout moth sulfur phosphorus, the thimet and so on 11 kinds of g organophosphorus pesticides were examined . The determination result was that agricultural chemicals was not examined.This method to examine organchlorine pesticides recovery rate was 94%~103%, coefficient of variation 9.8%~13%; The gorganophosphorus pesticides recovery rate was 85%~106%, That the coefficient of variation is smaller than 18% were 10 kinds,and that the coefficient of variation is 32% was 1 kind.6.Lead, cadmium, mercury and arsenic and so on heavy metal of determination results respectively were: 0.1521 mg/100g,0.012 mg/100g,0.002 mg/100g,0.04 mg/100g, they all did not surpass the national definition content. Dispeling the sample with the microwave, dispeling thoroughly ueing11 minutes,but with other method needed several hours and the resolution is incomplete.Using the atomic spectrophotometric method to examine, the recovery rate was 96%~103%, andrelative standard deviation was0.9%~3.5%.7.Using the ion chromatography to examine ,the nitric acid salt content was 1.53×102 mg/kg, nitrite was 1.25mg/kg, they were smaller than the national definition content≤3000mg/kg and≤4mg/kg. Chromatograph condition: IonPac AS14 analysis column (4×250mm) (Dionex); IonPac AG14 guarantees the bollard (4×50mm)(Dionex); Drip washing fluid: 3.5mMNa2CO3/1.0mMNaHCO3; Drip washing liquid flow fast: 1.0mL/min; Specimen handling volume: 10μL. Recovery rate of this method was 94%~103%,relative standard deviation was 9.8%~13%.8.The method to examine the harmful substance had good reproduction quality and high returns-ratio characteristic, then it was simple, fast, accurate, thus reduced the labor intensity, raises the working efficiency.
