The mensuration of trace acrylamide in surface water and food by Solid phase metro extraction– High performance liquid chromatograph(SPME-HPLC) has been studied in this paper. First, put different concentration acrylamide solution in test tube,than extract the acrylamide with carbon fibre in the refrigeratory(4℃), take out the carbon fibre to wash down the acrylamide with methyl alcohol,at last,determine the acrylamide by High performance liquid chromatograph (HPLC).On this condition,the area of the peak response linearly regressed to the concentration of acrylamide within the range from 5~200ppm. After solid phase micro extraction, we can improve the minimum detection limit for one integer magnitude.The amount acrylamide in food (such as in potato chips,oil cake,roasted bread) could de determined in the select conditions.The average contant of acrylamide in potato chips is 2.69μg/g, the average contant of acrylamide in oil cake is 3.10μg/g,we could't determint acrylamide in roasted bread,these results are similar to the related reports(acrylamide in potato chips is 0.3~2.3μg/g, the average contant of acrylamide in oil cake is 0~310μg/g). The method also provides a fast, simple, practical way to determinate trace acrylamide in sample.
