Study On Venison Quality And Active Substrate Of Tianzhu Hybrid Red Deer

In the study, the research were series of hybrid red deer that were grew in the HUAZANG deer feedlot of the Tianzhu Tibetan Autonomous County, three emasculate health tianshan-qinghai hybrid red deer and three tianshan-qinghai-talimu hybrid red deer were selected randomly with 3~5 years old year as experimental material and three tianshan purebred red deer as comparison.They were butchered together and choose sample ,then some studies were tested and analysed, such as weight, meat quality, nutritional components, active substances , serum biochemistry indices with the average method , the amino acid autoanalyzer, the flame atom absorption spectrophoto meter, the method of reagents case and so on and some correlation were analysed.The results are as follows:1.Production traits: Front the tianshan-qinghai hybrid red deer butchers the live weight is 183.00kg.Thetorso body weight of tianshan-qinghai hybrid red deer and three tianshan-qinghai-talimu hybrid red deer are all 99.25kg, that is higher than tianshan purebred red deer. The eye-flesh area is 60.49cm2, also is higher than tianshan purebred red deer. Slaughtering rate of three tianshan-qinghai-talimu hybrid red deer is 60.59%, remarkably is higher than the tianshan-qinghai hybrid red deer and tianshan purebred red deer.2.Nutritional components:The tianshan-qinghai-talimu hybrid red deer venison contains protein 23.49g/100g, does the fat content is 2.03g /100g, remarkably is higher than the tianshan-qinghai hybrid red deer and tianshan purebred red deer.The Cu element content is 0.20mg/100g, the Fe content is 15.96mg/100g ,the Zn content is 15.9713mg/kg, that is no remarkable difference with the tianshan-qinghai hybrid red deer and tianshan purebred red deer, the amino acid is rich and the scoring approaches the FAO pattern.3. Edible quality:The meat color pH value and the marbling of tianshan-qinghai- talimu hybrid red deer are all good, the musclefiber diameter is 21.30m, tenderness shearing force is 5.50 kg/cm2, that are better than tianshan purebred red deer.4.Active substances: The tianshan-qinghai hybrid red deer venison'active substances SOD is 70.00±8.95 U/mgprot,and its E2,T,GH are 5.80±2.10 ng/ml,0.78±0.12 ng/ml and 0.76±0.11 ng/ml respectively.5.Serum biochemistry indices: The SOD and E2 of tianshan-qinghai hybrid red deer are highter, they are 176.72±3.86 U/ml and 6.38±1.54 ng/ml respectively.The T,GH of three tianshan-qinghai-talimu hybrid red deer are 0.96±0.01ng/ml and 1.04±0.35 ng/ml respectively.To the sample in GPT,GOT,GGT,AKP,ACP,CK,LDH,HBDH,AMS,XOD and so on 10 items of blood serums enzymes carry on the determination, the GPT,CK,LDH,AMS of tianshan-qinghai-talimu hybrid red deer are remarkably higher than tianshan purebred red deer, they are 45.00 U/L,468.17 U/L,701.00U/L,137.50 U/L respectively. Other indicators are not significantly different.
