Xinjiang Jun jujube has the largest scale and output of domestic jujube and become the main source of economic growth of main cultivated tree species and fruit growers in regional agricultural structure adjustment and optimization.Along with the development of Junzao planting high quality development,the quality of fruit is famous all over the country,consumer demand for the safety of Junzao internal quality more and more attention,but the research on the quality safety division is still stay in a single nutritional index and appearance characteristic index.Therefore,to analyze and evaluate the nutritional and functional characteristics of Jun jujube in main producing areas of Xinjiang,and to realize the diversified development and utilization of jujube resources,so as to promote the coordinated development of Jun jujube production and marketing.This paper focuses on the cultivation of Jun jujube in 11 counties and cities in the main production area of Xinjiang,and focuses on the following three problems:(1)to explore the nutritional and representative characteristics of steed jujube in different producing areas;(2)analysis and evaluation of amino acid nutrition value of jujube in different producing areas of Xinjiang;(3)the correlation of mineral elements content and quality of jujube in different producing areas of Xinjiang was preliminarily explored.(1)The total distribution of 18 quality indexes in Xinjiang Jun jujube is higher than that of Jiaocheng Jun jujube,which means that the overall nutritional quality level of Xinjiang Jun jujube is better than that of Jiaocheng steed jujube.(2)Analysis shows that reducing sugar,fructose and glucose,soluble solids,protein,zinc,copper,iron,phosphorus,calcium,total sugar and flavonoids can reflect the variation of the above 18 indexes,which is suitable as a representative indicator of the quality characteristics of Xinjiang steed jujube.(3)The contents of 17 amino acids in Xinjiang 6 counties and Shanxi Jiaocheng jujube were significantly different.According to the calculation and analysis of the international standard protein model,it is concluded that the highest degree of protein closeness of Jun jujube in different producing areas is Akesu,and the lowest degree is Jiaocheng.(4)The RC value of the essential amino acids of jujube protein in different producing areas was compared.The first limiting amino acid is valine(valine).The first kind of jujube in Awati,Qira and Akesu provinces was divided into the first class,and the protein composition of the producing area was more consistent with the human protein nutrition requirement.
