Rapeseed oil commonly known as rap oil,is one of the four great vegetable oil breed in the world,Its output fewer than palm oil and soybean oil only.Rapeseed oil is the main breed of the vegetable oil in our country,have large reserves and many varieties. With the development of oil industry,vegetable oil contains some special bioactive ingredients which have special physiological function to human body attract people's attention,even its low levels,but relate with certain special efficacy to health protection. Therefore,crop genetics and breeding research worker make great efforts to improve bioactive ingredients besides development of high-yielding oil crops.This research mostly study on the yellow-seed oil and black-seed oil,via compared with other rapeseed oil,character and oxidation stability of different rapeseed oil have analyzed. Fatty acid composition and plant sterols andα-tocopherol content of different rapeseed oil have analyzed by GC and HPLC.The result of this test can provide advice for consumers to purchase or use vegetable oils,and provide a theoretical basis for germ plasm empolder and quality meliorate of rapeseed oil.We draw the following conclusions eventually.(1) Erucic acid content of yellow-seed oil and black-seed oil is about 8%,is close to the standard of "lower glucosinolates,lower erucic acid";but the erucic acid content of market rapeseed oil is about 20%,have great difference with the standard.Content of linolenic acid in rapeseed oil is higher than other vegetable oil,but the content of unsaturated fatty acids is lower than other vegetable oil,when mixed edible oil rich with linoleic acid,its nutritional value will be improved. (3) Hydrolyze different sources of fat with lipase exists quantitative relationship,with definite bound,the increase of hydrolysis time and amount of lipase,the rate of fat digestion submit linear upward trend.The more content of unsaturated fatty acids in vegetable oil,the hydrolysis rate by the lipase is higher;the content of erucic acid affect lipase hydrolysis,the higher the acid content of oil,the smaller the rate of hydrolysis.(4) The best pre-treatment conditions of extract plant sterol from rapeseed oil have confirmed.Optimized extract combination is KOH concentration of 0.8mol / L, saponification time 1h,saponification temperature 90℃;sample solution after disposal, gain of plant sterol is higher.The component and content of yellow-seed oil is: brassicasterol 53.89 mg/100g,campesterol 158.74 mg/100g,stigmasterol 17.21 mg/100g,β-sitosterol 339.25 mg/100g;The component and content of yellow-seed oil is:brassicasterol 59.22 mg/100g,campesterol 138.61 mg/100g,stigmasterol 10.57 mg/100g,β-sitosterol 292.43 mg/100g.(5) Extraction ofα-tocopherol by ultrasonic,sample preparation is simple and rapid, with little organic solvent dosage and cost;via incertitude assess,the distill result have well reproducibility.Theα-tocopherol content of yellow-seed oil and black-seed oil is 24.5 mg/100g and 19.5 mg/100g.
