Soybean phospholipids which having hydrophilic group and hydrophobic group have been widely used in food, pharmaceuticals, cosmetics and so on. However, soybean phospholipids are limited in practical application because of some unsaturated double bonds of soybean phospholipids which easily oxide in the air, poor dispersivity and low hydrophilicity and Hydrophile-Lipophile Balance. In order to overcome these shortcomings of the soybean phospholipids, as well as expand their applied fields, the modification of soybean phospholipid are investigated by using chemical modification.Modified soybean phospholipids coupling of ethylene oxide and hydroxy were prepared using soybean phospholipids via the reactions of ethoxylation and hydroxylation. The Process Parameters of Modified soybean phospholipids coupling of ethylene oxide and hydroxy affecting the epoxy value were mainly investigated. The optimum conditions were obtained by single factor method and orthogonal test. A preferred synthesis process was given as follows: The soybean phospholipids was first modified by hydrogen peroxide at 65℃for 5.5 h, when aceticacid was chosen as active oxygen carrier, strong-acid ion exchange resin was chosen as catalyst, and their dosage was 8.4% and 7% of the soybean phospholipids in weight respectively. The dosage of hydrogen peroxide was 55.5% in weight. Then the epoxidized soybean phospholipids was modified by polyethylene glycol(PEG) at 83℃for 3 h, when the ratio of PEG and epoxidized soybean phospholipids in weight was 1.2:1, the dosage of KOH was 1% of the epoxidized soybean phospholipids in weight. The conditions of the reactions are milder and safer than that reported in the literature.Infrared spectroscopy(IR) was used to characterize the structure of the products. The dispersivity, emulsifying ability and hydrophilicity of the product were measured. The results showed that all of these properties are significantly improved, which provide theoretical foundation for the development and application of phospholipid.
