In our diet, rice is eaten most. However, the rice will produce a series of physiology, chemical and physical changes in storage. This paper isdirected towards theaging, pests, mold and other major issuesof rice storage, selecting Tianjin Xiaozhan rice, Shenyang rice, Heilongjiang rice as materials. Plastic film tent modified atmosphere treatmentis is used and studying the changs of physical and microbial pollution on the quality of rice.The processing of different packaging materials and different antibacterial agents and different areas are setted, selecting the typical nutritive index such as water, fatty acid, total acid, reducing sugarandlight penetration which are measureing the changes of thequalityof rice. In order to provid the theoretical basis data for preservation of plastic film tent modified atmosphere for rice.(1)By research on MAP threshold and filter,has formed a series of PVC,PE film of grain and designed tow kinds of formula.focus on breath intensity , totol acid, fatty acid, reducing sugars, viscosity and other physical and quality indicators.The results showed that 0.05mmPVC wrap is the best.(2) The technology of Plastic film tent modified atmosphere was used to rice storage, the storage environment of rice can be self-regulated. The quality of rice can be better maintained togethering with packages after storage. After stored 180-day, the moisture content of 12.72%, the level of fatty acids 9.1665mgKOH/100g, total acids of 0.4653%, reducing sugar level of 0.6124%.The 0.05mmPVC film packages make the best effect during the storage, the average moisture content of 12.74%, the average level of fatty acids 12.46mgKOH/100g, total acids of 0.3556% on average, reducing sugar average level of 0.5224%.(3)Bacteriostasis is one of the main factors for the preservation.Bacteriostat is used on rice can inhibit the groth of superior microbe,prolonging the storage of developing the edible quality.After stored 5-week,the water of rice is reducing 7.29% stored in the room,total acide is increasing 6.9 times on average,fatty acide is 4.1776mgKOH/100g on average. The water of rice is reducing 7.29% stored in the plastic film tent,total acide is increasing 6.25times on average,fatty acide is 3.9665mgKOH/100g on average. From the four bacteriostats,the effect of Sec-Butylamine of storage is best.(4)Rice production areas and varieties are important factors on quality of rice. Different production areas of rice contained the different type and different quantity of microbe and physical and chemical changes differently. The effect of Shenyang rice which is in Plastic film tent at room temperature is best. After stored 150-day, the average moisture content of 14.20%, the average level of fatty acids6.123mgKOH/100g, total acids of 0.5982% on average, after stored 35 days,fungal infection rate was 8.1% .The rice of Senyang makes the best effect during the storage period, the average moisture content of 13.97%, the average level of fatty acids6.083mgKOH/100g, total acids of 0.6563% on average, after stored 35 days,fungal infection rate was 7%,followed the rice of Tianjin.,the rice of Heilongjiang is the worst.
