Quality, physiological activity of sweet cherries were studied during modified atmosphere box preservation periods in order to determine the suitable storage conditions for the fruits. In the experiment, the physiological indexes such as breathing intensity, ethylene, ethanol formation rate, malondialdehyde (MDA), peroxidase (POD), superoxide dismutase (SOD), polyphenol oxidase (PPO) and total phenols content of sweet cherries were analyzed during different storage conditions, and their relationship between senescence and browning were revealed. Total soluble solids, titratable acid, VC content, fruit hardness were also measured during different conditions to set up a simple and better method. The results will provide integrative technologies for commercial storage of sweet cherry.Following contents were included in this experiment:the study of feasible packaging of modified atmosphere, the study of feasible storage environment of sweet cherries using modified atmosphere box, the study of feasible varieties of sweet cherries for modified atmosphere box storage, and the study of feasible precooling time of modified atmosphere box storage. The results were shown as follows:The modified atmosphere boxes method was more adaptable for cherriy preservation in comparison with film packaging. The rotting rate of fruit in film was 1.5-2.9 times higher than that in the modified atmosphere boxes after storaged for 90ds. During the late period of storage, the effect in MA-2 method was marktable and the rotting rate was only 12.96% after storaged for 90ds.Freezing-point method was superior to common storage for atmosphere box storage, whose rotting rate was 0.55 times less than ordinary refrigeration after storaged for 90ds, which could slow down fruit decay, stalk withered and flesh browning. It also inhibited the increase of MDA content and decrease of titratable acid content.Various cultivars were all suitable for plastic atmosphere box storage, and the storability of Juhong and Sammit was better than others.Cherries with pre-cooling time of 18h were more suitable as a preservation material, which was not only conducive to the quality of the fruit, but also beneficial to extend the storage life.PPO activity of sweet cherry in this experiment showed closely relation to fruit browning potential (BP), similar as MDA content to fruit decay.
