The modern nutrition research discovers that the protein is digested and absorbed mainly in low peptide but not in amino acids after enzymes hydrolyzing. And the amino acids what is consisted of low peptide may not be essential amino acids. In additional to having the easily absorption characteristic, these low peptide still have many good functions characteristic and the physiological activity. They can be used widely in the food field.Ultrasonic wave method was applied to extract yellow pigment from corn gluten meal. The single fact or experiment and quadratic orthogonal rotation regression combination design were adopted to study the effects of ultrasonic power, liquid - solid ratio extraction temperature, ultrasonic extraction time etc on the yellow pigment extraction. The optimum process conditions of extraction of corn yellow pigment by ultrasonic wave method were determined, then extraction regression model were established. Our results showed that liquid -solid ratio and ultrasound temperature could have a greater impact on extraction of the pigment than extraction time and ultrasonic power.Microwave method was applied to extract zein from corn gluten meal which was extracted yellow pigment by ultrasonic wave method. The single fact or experiment and quadratic orthogonal rotation regression combination design were adopted to study the effects of alcohol concentration,microwave power, liquid - solid ratio extraction temperature, microwave extraction time etc on the zein. The optimum process conditions of extraction of zein by microwave wave method were determined, then extraction regression model were established.It's very difficult to hydrolyze zein which is harder to be dissolved in water. It's found from this research that Alcalase can still keep a high activity, the single fact or experiment and orthogonal design were adopted to study the effects of hydration, and hydrolysis of zein(two step enzyme hydrolysis) can reach the hydrolysis degree above 30%, protein conversion can reach 95%.Corn gluten meal is hydrolyzed by Alcalase, the single fact or experiment and orthogonal design were adopted to study the effects of hydration, and hydrolysis of corn gluten meal can reach the hydrolysis degree above 40%, protein conversion can reach 90%. Anti-oxidation and promoting the alcohol metabolism activity of corn peptide has studied in this paper, It turned out that promoting the alcohol metabolism activity of corn has quantity and effect connection.
