Grapefruit, also named as Wendan, is a mature fruit of pomelo trees which is an evergreen fruit tree of rutaceae plant, it is rich in many places in our country, such as Fujian, Guangdong, Guangxi and Jiangxi. Its peel contains a variety of active ingredients, including bioflavonoid (naringin, neohesperidin, etc), essential oils, pectin, vitamins, polysaccharides and minerals. Presently, the comprehensive utilization of naringin stays in the experimental stage only and has not been industrialized in a large-scale. Thus, how to carry out the comprehensive utilization of citrus peel slag, including naringin, fully for maximum economic profits is an important subject of fruit processing now we are faced.Owning to the importance and representativeness of pomelo peel, we chose pomelo peel as material, optimized the extraction condition of its effective ingredients in this paper and prospected its bright future. In order to provide some reference idea for the development and utilization of pomelo peel in our country. Concrete contents of this paper were carried out as follows:1. On the basis of an extensive literature, we systematically summarized the nature of effective ingredients in pomelo peel, applications and research status, and presented the significance of topic selection and main work we have to do.2. Essential oils, pectin and bioflavonoids were extracted orderly from pomelo peel in this paper, we put an emphasis on discussing the optimization of extraction condition, and measured its relevant quality indexes.3. Naringin and neohesperidin were separated from bioflavonoids with macroporous adsorption resin separation column, then naringin dihydrochalcone and neohesperidin dihydrochalcone were synthesized respectively by ring-opening reaction and hydrogenation. Their structures were characterized by melting point, IR, MS and 1HNMR.
