The food industry is the basis of mankind's survival and development, and is major industries in the people's livelihood. Candy processing is an important part of the food industry. With the emergence and development of intelligent control, candy processing automation technology has achieved tremendous progress. It is the development of Information technology, automation technology and artificial intelligence theory that provide a solid foundation for progress of confectionery processing technology.The advanced industrialized countries have used these technologies amentioned above for a long time in candy processing.After decades of efforts, the scientific and technological level of candy processing industry in China has been greatly improved, but because of the original foundation is weak and lack of long-term investment, although some individual technical approach or reach the international advanced level, the production technology compared with that of the advanced industrialized countries have a big backwardness, which mainly includes confectionery factory's obsolete equipment, labor productivity is not high, the low level of information technology, inadequate investment in science and technology, and energy waste is widespread, and so on.This paper has a comprehensive use of information technology, automation technology and artificial intelligence, and gives deep research on monitoring and quality control in the whole process of the candy production process, to find candy processing quality control law, and develop a testing and optimizing control systems, so as to improve product quality and production efficiency and their market competitiveness.This paper major work includes:(1) Intelligent Detection Technology researches on candy production processThe research on monitoring law is based on processing characteristics of the production process, study the multi-sensor data collection, and design a learning function based production process monitor.(2) Multi-Sensor Data Fusion Technology reseaches on candy production processIt includes researches on complex non-linear and dynamic data fusion technology, data selection, cleaning, conversion and mining technology, which gives engineering data acquisition and knowledge processing means for dynamic monitoring of candy processing.(3) Quality prediction and Optimization model reseaches on candy processingBased on needs analysis of candy processing process, it researches the quality of forecasting models for the typical processing operations (such as mixing inflatable, etc.), namely, research on relationships between quality index and processing parameters indicators (such as water, reducing sugar content, etc.), to obtain knowledge of optimization of process parameters through data mining technology.(4) System for intelligent and optimal control for Candy Production LineResearch on candy processing technology and processes knowledge acquisition and the establishment and maintenance of data management of knowledge base. And to study intelligence and optimal control methods of the typical candy processing, constructed intelligent control devices for candy processing, and develop hardware and software system for optimized control.This paper's innovative points are as follows:(1) the complex process of food-processing prediction model methodMain points of Quality prediction modeling method include: the complex process of food processing, data collection techniques; multi-sensor data fusion technology; large amount of data-based data mining methods.(2) Technology optimization method of candy processingThe guidelines of candy processing optimization technology include: Process Knowledge representation; candy process the key technical elements of balance and control technology; candy process simulation technology; knowledge of the evolution and maintenance of technology.
