High oxygen MAP has been a hot technique which attracts lots of domestic and international experts in protecting the fruit and vegetable. High oxygen MAP can prevent the respiration in short of oxygen, reduce the growth and self-reproduction, decrease the respiration and combination of ethane, slow down the change to brown, lessen the ethanol and acetaldehyde, decrease finally decay incidence and prolong the shelf life. Now, the study of high oxygen MAP is mainly about the suitable gas, package material, temperature and so on, the ration of product/air is nearly studied.Based on the facts above, the study of this article is mainly as fallows.(1) Analyze the theory of the high oxygen MAP and lay a foundation for the study of the high oxygen MAP.(2) Study the evaluation criterion of the fruit and vegetable which include weight-loss ratio, titratable acid, vitamin C, decay incidence in this article.(3) Through the experiment about the effect of different ratio of product/air which are 0.030,0.040,0.074,0.090,0.107in high oxygen MAP on the quality of strawberries, find the group with 0.030 ratio of product/air exhibits significantly lowest weight-loss ratio and highest vitamin C, the group with 0.074 ratio of product/air exhibits significantly lowest decay incidence, the effect on titratable acid is slightly affected by ratio of product/air.(4) Analyze the impact factors of inner environment of package and built the model of inner environment of package. Through the model, analyze the effect of the different ratio of product/air on the density of gas in the high oxygen MAP, we can also determine the most suitable ratio of product/air and other parameters of high oxygen MAP, so the model can guide the high oxygen MAP.High oxygen MAP has been attracting the researcher since it is raised. This article analyzes the theory of the high oxygen MAP and is also involved with the model of inner environment and design of high oxygen MAP.
