With the gradual increase of high-quality indica reserves in China,people are increasingly concerned about the shelf life of high-quality indica.But so far,China has not formulated a standard for quality assurance of quality rice.In response to this problem,in this paper,a high-quality indica Huanghuazhan of the national standard was selected as the experimental object,and different water contents?13.5%,14.5%,15.5%?were studied at different storage temperatures?15?,20?,25?,30?,35??under the conditions of quality changes in three years,trying to find out the quality of high-quality indica that can reflect the quality of the evaluation indicators,and the establishment of high quality rice quality model of the more policy to fill the quality of rice shelf life in the research gap.Research results show that:?1?The rice comprehensive scores of high-quality indica stored under all conditions decreased with the extension of storage time during the experimental period,and the higher the moisture content and storage temperature of the sample,the greater the decrease.The comprehensive score of rice reflects the change in the quality of high-quality indica,and from the results of this experiment,the change in the comprehensive score of rice is obvious,and the operation test is also relatively simple.Therefore,the comprehensive rice score is selected as sample evaluation index of the high quality rice used in this experiment.?2?The taste quality of high-quality indica stored under all conditions changed to varying degrees.The hardness score of high-quality indica rice increases and the viscosity score decreases,which means that the rice hardness increases with the extension of storage time,and the viscosity decreases with prolonged storage time.When the high quality rice with high moisture content is stored under high temperature storage conditions,the change is even greater.The rice elastic score of high-quality indica did not change much,and there was no obvious change rule,indicating that the storage conditions had no obvious effect on rice elasticity of high-quality indica.?3?Through the analysis of the correlation between different quality indicators during the storage process of Huanghuazhan and comparing the correlation between rice comprehensive score and other quality indicators,other indicators for evaluating the storage quality of high-quality indica can be obtained as yellow grain rice rate,germination rate,fatty acid value,falling number,breakdown,gelatinization temperature.?4?During storage,the yellow rice rate,fatty acid value,falling number,and gelatinization temperature of high-quality indica with different water contents increased with prolonged storage time,and the higher the temperature,the greater the increase;The germination rate and breakdown decrease with the extension of storage time,and the higher the temperature,the greater the decrease.The higher the water contents of high-quality indica under the same storage temperature,the greater the change of its quality index.?5?During the storage period,the storage temperature had the greatest influence on the quality of Huanghuazhan,and the influence of its quality evaluation index reached a significant level;The storage time only had a significant effect on the gelatinization temperature;The water content only had a significant level of germination rate.Therefore,during the storage of high-quality indica,its moisture content,storage temperature and storage time must be strictly controlled,and the quality of high-quality indica can be well maintained.?6?In the determination of high-quality indica quality evaluation indicators,this article considers factors such as less suitable indicators,simple and easy-to-measure measurement methods,and good reproducibility of measurement results.Combined with the results of previous analysis of quality evaluation indicators,the rice quality score is finally selected.Finally,the comprehensive evaluation score and fatty acid value of rice were selected as evaluation indexes for the storage quality of the highest quality rice.?7?The criterion for determining the shelf life of high-quality indica in the evaluation experiment is:the comprehensive score of rice is not less than 60points.Through the SPSS regression curve fitting,a prediction model for comprehensive rice quality scores with different moisture contents under different storage temperatures was established,and the predicted shelf life was matched with the moisture content and storage temperature to obtain the helf life of high-quality indica.The prediction model for high quality rice was obtained:Yshelf life=e15.081-0.398Xmoisture content-0.148Xstored temperature.
