The almond protein was hydrolyzed by Protamex and Alcalase to obtain Almond Peptides Mixture(APM).The bitterness and degree of hydrolysis(DH) of APM were studied.Further more the function of APM on auxiliary lowering blood glucose was investigated by rats test.First, the procedure of hydrolysis of Almond protein by Protamex and Alcalase was optimized in the research.Based on single factor tests of Protamex and Alcalase respectively,a regression model was established with four factors related to the DH of APM by the Uniform Design test.The optimum combination of Protamex and Alcalase was decided.The seguence of hydrolysis of Protamex and Alcalase was determined in terms of the single enzyme.to reduce bitterness and improve DH. The results showed that the actualed DH 30.23%,average length of peptides 3.31, average MW 381.88 and bitterness 1.63 were obtained.48 rates were classified into 6 groups randomly. Among them 4 groups were injected with STZ(To cause diabetes mellitus,DM) ,2 groups free of injection. Among 4 injectied groups, 2 of them feed with APM. The other two; one feed with water as control, the other feed with Metformin to reduce blood glucose purpose.The results have shown that 2-APM group rates have lower blood glucose level significiently(p<0.01)than the control groups. Also the APM has a regulatory function on blood glucose level of the group free of injected STZ.Comparing APM feed groups(which injected with STZ). To metformin feed group, the former have shown lower reversing effect of blood glucose level signifciently(p<0.01). The TC and TG of blood plasma injected group were reduced significiently(p<0.05) after feed with APM.Results also have shown that the APM can not influence blood insulin level of the groups free of injection.However, for the injected group and 2-APM group the reduction of blood insulin(BIn) were minimized signiciently (p<0.01). During 42 days observation the high dosage of injection of APM group have shown remarkable inhibition effect on reduction of blood insulin(BIn) than the low dosage of APM(p<0.05).
