Almond meal is a byproduct of the processing of almond oil,and it contains a lot of proteins.Almond proteins are decomposed by enzymes to get peptide products,and it's a development direction of deep processing on almond.Through our previous study,we obtain the technological condition of small scale laboratory.In order to meet the needs of enterprises,the key processes and key conditions in the the process of almond polypeptide producting are enlarged,and we obtain the production process route of peptide almond powder and the preliminary designs for the almond polypeptide drinks factory.We obtained the following conclusions:(1)Alkali-solution and acid-isolation was used on almond meal protein extraction process.Alkali-solution specific conditions:solid-liquid ratio was 1:8,and extraction temperature was 50?55?,the same time p H was from 7.5 to 8.0,passing secondary leaching.Acid precipitation process conditions as follows:p H was 4.0?4.5,and the sample was centrifuged at 4000r/min after being stirred for 15?30 min,then the heavy phase was taken out to be centrifuged again after acid elution to get the almond protein extract.Commercial protease which main contained alkaline protease enzyme was selected on enzymolysis technology.The substrate concentration was 10%?15%,and enzyme dosage was 0.3%?0.5%(by weight of protein material).The hydrolysis temperature was 54?56?,and hydrolysis p H was 7.5?8.0,meanwhile hydrolysis time was 4?6h with continuous stirring.Enzyme deactivation was at the condition of 85? for 10 minutes.(2)A flexible combination of two kinds of options were used to separate the polypeptide hydrolyzate extracted.The first program was a high-speed centrifugal process with two steps.The other program was ultrafiltration process with the centrifugal liquid which be gotten from the protein enzymatic hydrolyzate after centrifuging was filtered by continuous microfiltration.Additionally,activated carbon adsorption can be chosen to improve product purity,and the salt ions of front part of the process can be desalted by nanofiltration removing,then we can get through the concentration and deployment technology to make the product diversified,possible.(3)Product handling included flash sterilization,spray drying,cyclone separating and packaging after cooling,and so on.Ultra-high temperature instantaneous sterilization condition was 145? for 10s with the steam pressure at 0.8 Mpa.Selecting pressure sprayer,it can be start spraying when the exhaust temperature reached 85?.The high-pressure pump pressure range was 3?20 MPa,and the sprayer spray head speed was 15000 r/min,while the water evaporation capacity was 350kg/h,and the inlet air temperature was 180?,at the same time the material temperature was 80?.Cyclone air flow was 640?1050 m~3/h,and the wind speed was 12?20 m/s.The bag-type dust collector used to baghouse dust(fine powder particles of the polypeptide)recovering.The polypeptide powder after cyclone separating was cooled by fluidized bed equipment with the fluid bed inlet temperature was 70?and the air temperature was 40?.After cooling,the product must through a 100-mesh shaker,then screening and packaging.(4)We designed a daily capacity of 72 tons of almond meal and 8 tons of almond polypeptide production process route.According to the need of production technology,we worked out material balance,selection of equipment and technology portfolio to meet production needs.Referring to the domestic like products standards,we put forward the recommendations of product quality standards.(5)Commissioned by the relevant companies,we preliminary planned a graphic design of almond polypeptide drinks processing.Zoning by rational classification,we gave a total initial planning with land use planning,building planning,graphic design.
