Potato residue now is pollution. In this study, starch sugar, dietary fiber and single-cell protein made from potato residue, that not only improve the value-added products, extend the industrial chain, but also turn waste into treasure, solve environmental problems.Firstly, I determine the contents of each component. Dietary fiber is 33.62% and starch is 40.11%. Based on the contents, I design the comprehensive utilization flow chart, as follows:Secondly, the liquefaction DE is 14.52% and iodine test show brown; the saccharification DE is 92.70% and does not deposit in ethanol. Filtration rate is slow down with temperature increases, so lower temperature is with faster filtration rate. Sugar decolorization experiments: carbon 0.7%, pH4, 80℃, 30min, can change light transmittance from 15.7% to 91.1%. Sugar impuritie agglomerate in high-temperature, can be filtered to enhance the transmittance; while sugar steams in the high temperature, so glucose occurs caramel reaction to decrease transmittance.Then, 200μm particle size is decided for dietary fiber, and bleach process is: 70℃, pH10, H2O25%, 3h, dry in 40℃, white level changes from 16.2 to 29.4. Extraction rate of dietary fiber is 20.6%, content is 92.73%, Water holding capacity, oil holding capacity, expansion is up to 8.2g/g, 5.5g/g, 6.2mL/g. The apparent viscosity is 1.88mPa·s, cation exchange capacity is 0.55mol/g. By electron microscopy analysis, we known that the surface structure of dietary fiber is loose, and gaps are large. By IR and GC analysis, we can see the changes between the potato residue and dietary fiber products.Finally, the yield of Candida tropicalis is 43.12%, the fermentation time is 72h, high concentrations cultivation sugar is for the best; five rings Candida tropicalis is the most suitable. Single cell protein is contented by 17 kinds of amino acids, content of glutamic acid is 5065.64mg/100g, and amino acids 37.31%.
