The research in this task was performed on the extraction, oxidation resistance and stability of orange peel pigment with the result which indicates orange peel pigment preserves a certain degree of stability to some food additives with better effects of eliminating free radicals. These characteristics provide some theoretical basis for the development and application of orange peel pigment in food industry, and it is believed that the orange peel pigment can be applied in more extensive areas along with the fast development of natural pigment and the increasing knowledge about it. The main research results in this paper are as follows:1. The analysis of the key techniques in extracting orange peel pigment with ultrasonic shows the effect factors in the production of orange peel pigment through ultrasonic extraction in declining order as follows: ultrasonic power, extraction time, extraction temperature and solid/liquid ratio. If ethanol is taken as the extraction solvent, the optimum progress of extracting orange peel pigment is as the following: extraction temperature at 40℃, solid/liquid of 1:20, power of 600W and extraction time of 30 minutes with the extraction rate of 18.25%.2. Orange peel pigment has a certain degree of effects in eliminating free radicals of O2, OH and DPPH with an increasing relationship between elimination rate and concentration, but the elimination effects of orange peel pigment on the such three free radicals is less marked than vitamin C.3. The research of the stability of orange peel pigment shows that the low temperature contributes to the stability of orange peel pigment and the retention rate of absorption and the high temperature will markedly reduce the absorption of orange peel pigment in the range of laboratory temperature. The orange peel pigment was exposed to light under different conditions with the results show that the retention rate of absorption is relevant to the conditions of light radiation, and the absorption will be reduced with the light strength increase. The direct sunlight can markedly destroy the absorption of orange peel pigment, and the orange peel pigment can be preserved with high retention rate of pigment in the condition of no light.PH value has a milder effect on orange peel pigment with higher retention rate of pigment under acid conditions and declined retention rate of pigment.After the addition of H2O2 in orange peel pigment, the retention rate of pigment declines markedly; after the addition of Vitamin C, the retention rate of pigment increase a little; after the addition of glucose, saccharose, potassium sorbate, citric acid, malic acid, sodium benzoate and metallic ions such as K+ , Ca2+, Na+, Mg2+, Al3+, Zn2+, and Cu2+, which shows the retention rate of pigment barely has any marked difference with comparison solution.
