Enteromorpha natural for the offshore shoal in the wild green algae,their natural breeding is particularly high,are large.East China Sea China Sea,especially the green algae (mainly Enteromorpha) is very rich,only the coastal Fujian annual naturealpro- duction (fresh weight) of 10 million tons.Green alga Enteromorpha,delicious and nutr–itious,but also has high medicinal value,development and utilization potential.In this paper,the devel opment of Enteromorpha Enteromorpha,protein isolate for the purpose of the separation of protein extraction and separation of proteins in E.prolifera physical and chemical properties and functional characteristics of the study,wished to separate proteins in E.prolifera industrial production and in food processing application reference.1. By enteromorpha enteromorpha and the composition of protein isolates were analyzed,results showed that E. prolifera crude protein content of 10.13%,seagrass crude protein content of protein isolates reaching a high of 80.39%.2. To the protein extraction rate of the marker analysis of single factor experiment based on the use of L9 (34) orthogonal to the separation of alkali extraction and acid precipitation method to optimize the extraction of E. prolifera protein test to determine the optimum conditions are:liquid ratio of 1:10,alkaline extraction pH 9,alkaline extraction temperature 60℃,alkaline extraction time 120min.3. Enteromorpha prepared on the separation of protein amino acid analysis shows that the amino acids is more complete,comprehensive essential amino acids,abundant;the first limiting amino acids lysine.SDS-PAGE electrophoresis separation of proteins displayed on E. prolifera is not a single pure protein,the main three subunits,molecular weight distribution of the three main areas,namely the 18.9kDa 24.4kDa 33.4kDa 36.5kDa and 55.3kDa.4. Enteromorpha were isolated on protein solubility,water holding capacity,emulsifying and emulsion stability,foaming capacity and foam stability,viscosity,oil absorption properties of functions,measured at different protein concentration, pH value,ionic strength Functional Properties.The results showed:(1) Enteromorpha protein isolate nitrogen solubility index (NSI) with the rise of pH,down then up,up in the isoelectric point of minimum,seagrass protein isolate NSI and NaCl concentration with temperature rise high and then decreased, the temperature 50℃and the NaCI concentration of 0.2mol / L,respectively, the maximum. (2) Separation of proteins in E. prolifera water retention with the rise of pH, down then up,up near the isoelectric point of minimum separation of proteins in E. prolifera water retention with the rise of temperature and Nacl and then decreased.(3) With the increase of protein concentration,seagrass protein isolate emulsion and emulsion stability increase with the separation of proteins in E. prolifera emulsification and emulsion stability were increased with the pH value and then increased,near the isoelectric point of the smallest,with the NaCl concentration.Enteromorpha protein isolate emulsion increase first and then decreased the emulsion stability decreased.(4) Separation of protein Enteromorpha foaming and foam stability increased with the increase of protein concentration increased with increasing pH value. Separation of proteins in E. prolifera foaming down then up,in the vicinity of the isoelectric point minimum,the foam stability at the isoelectric point of the most stable,NaCl concentration of 0.2mol / L,the basil protein isolate foaming and foam stability are the best,in other contexts,foaming capacity and foam stability increase first and then decreased.(5) Separation of protein enteromophites the viscosity increased with increasing protein concentration,protein separation enteromorpha viscosity of the isoelectric point at least,the further away from the isoelectric point higher;NaCl concentration of 0.2mol/ L.Enteromorpha protein isolate when the viscosity of the maximum,then decrease the viscosity.(6) Enteromorpha protein isolate at 40℃in oil absorption ideal, further increase of temperature will have adverse effects, the oil absorption increases with temperature decrease.
