Purple sweet potato (Ipamoea batatas L.) for spinning flower secco annual herb, is a kind of important natural pigment source and nutritional food source. In recent years, the purple sweet potato are mainly used to withdraw pigment, the remaining waste residue that after mostly extracted pigment, just considered low price which used to feed animals. In order to evaluate the nutrition value, edible safety toxicology, weight reducing, catharsis and production improvement of remaining waste residue of purple sweet potato as well as improve the academic theory of usage, we conducted this study.The nutrient composition of waste residue from extracting pigment of Ipamoea batatas L. was analyzed by National standards analytical methods. The results indicated that waste residue from extracting pigment of Ipamoea batatas L. contains protein 6.2g/100g, crude fiber 2.6g/100g, crude fat 0.4g/100g, therefore it is a low-fat and high-fiber food. It contains 17 kinds of amino acids and essential amino acid content reaches 2590mg/100g,44% of total amino acids. It also contains five kinds of fatty acids, among which saturated fatty acids, mono-unsaturated fatty acids and polyunsaturated fatty acids account for 16.55%,43.75%,39.70%,respectively; vitamin C content reaches as high as 63.0mg/100g; rich in calcium, for 210mg/100g. Waste residue from extracting pigment of Ipamoea batatas L prove to be worthy of development and utilization.To evaluate the edible safety of extracting pigment of Ipamoea batatas L. and provide a theoretical basis for research and development of extracting pigment of Ipamoea batatas L The evaluation followed GB15193.1-2003-"Procedures for toxicological assessment of food safety" includes:acute toxicity test, mouse bone marrow micronucleus test and mouse sperm abnormality test. The acute oral LD50 in rats and mice was greater than 10g/kg.bw and belong to nonpoisonous. Mouse bone marrow micronucleus test and mouse sperm abnormality test were negative. After animals testing, no significant effects were observed on growth and body weight among different dose groups. Extracting pigment of Ipamoea batatas L.have non-toxic side effects and no mutagenic effect on experimental animals.Water extraction purple sweet potato pigment has certain effect on reducing weight. The SD rats have been given respectively 1.25,2.5,5g/kg. bw.d from mouth filling in stomach for 42 days which dose equal to 4,8,16 times of adult recommended intake (100g/each standard of human day). Under the condition of no significant different (P>0.05) of intake food between model group and control, the results showed that there were significant differences between model group and control group on TG and TC(P< 0.01). The each level of dose values of control group's TG and TC were lower than model group(P< 0.05). The average weight of model group was higher than control group(P< 0.01), means that the success of building weight model. The weights of positive group, moderate dose group and high dose group were lower than model group's weight(P< 0.01). The significant differences of body fat and fat body ration were detected between model group and control group(P< 0.01). The fat body ration of positive group, moderate dose group and high dose group were non significant when they compared with model group (P> 0.05). The weight reducing function of remaining waste residue of purple sweet potato was proved.The mice have been given respectively 2.5,5 and lOg/kg. bw.d from mouth filling in stomach for 10 days which dose equal to 8,16 and 32 times of adult recommended intake (100g/each standard of human day). The results showed that there were significant differences between model group and control group on following items:ink motional rate, the time of first defecate, the quantity and weight of 6 hours dejecta(P<0.01). These results proved the success of building model. The high dose level of ink motional rate of control group was higher than model group(P<0.05). The increase trend was found in low group and moderate group and the decrease trend of the time of first defecate was found in each dose level, however both kinds of trends were non-significant(P>0.05). The quantities of dejecta of high dose group and moderate dose group were higher than model group(P<0.01). The weights of high does group, moderate group and low group were higher than model group(P<0.01). The catharsis function of remaining waste residue of purple sweet potato was proved.The residue of purple sweet potato after pigment extraction was used as the main raw material to produce wine. A fuzzy comprehensive evaluation model was adopted to evaluate the sensory quality of the prepared wine product. The results indicated that fermentation temperature, material-to-liquid ratio, sugar addition amount, fermentation time were key factors during the fermentation process of wine. Orthogonal array design was used to determine optimal fermentation processing parameters. The optimal processing parameters were fermentation temperature of 25℃, material-to-liquid ratio of 1:25, sugar addition amount of 22%, and fermentation time of 12 days. Fuzzy comprehensive evaluation showed that the sensory quality for 9 kinds of wine was ordered as follows:6#>3#>5#>4#>7#>9# >2#>1#>8#. This evaluation method was accurateand scientific.
