This research developed fermented soybean milk with probiotics.In the research, domesticated Lactobacillus GG LGG, Lactobacillus Acidophilus,Streptococcus thermophilus, Bifidobacterium bifidum,Lactobacilus bulgeriaus, Lactococcus lactis cremoris, Lactobacillus casei, Lactobacillus plantarum, and the yeast, totally 9 kinds of microorganisms.Among them, Lactobacillus GG LGG, Lactobacillus Acidophilus,Streptococcus thermophilus,,Lactobacilus bulgeriaus, Lactococcus lactis cremoris can grow in the environment of 80% soybean milk(rest 20% is milk), the others 4 kinds of microorganisms--Bifidobacterium bifidum, Lactobacillus case, Lactobacillus plantarum, and the yeast can grow well in 100% soybean milk. In this research, developed fermented soybean milk craft, containing lving germs,with Lactobacillus GG LGG, Lactobacillus Acidophilus, Bifidobacterium bifidum, Lactobacilus bulgeriaus, and yeast five kinds of benefits,and the population density:1.1×109 c fu/ml,1.1×109cfu/ml,4.9×1010cfu/ml, 2.0×108cfu/ml,5.5×108cfu/ml, which forms leaven in the proportion of 4:4:4:0.5:8. Got three diferent tases fermented soybean milk:without cane sugar, low cane sugar(cane sugar density is 0.2%~0.3%) and higher cane sugar(the cane sugar density is 7%).To promising the benefit livings germ pass humans'stomach and arrive the bowel, to make use of living benefits improving human body bowel germ balance, promoting human body health, in this research, still developed a capsule, exclusively used for adding in soybean milk, which can be dissoluted in bowel. The tiny capsule take sodium alginate as a wall material, carry on second packs with the chitosan.Take two Bifidobacterium bifidum as core material, taking glycerin as the germ protection, core material (wet germ mire) and wall material(the seaweed sour sodium) comparison is 2.2:1. The craft of making benefit tiny capsule, and averted from vacuum drying, or spray drying ect. high energy-consuming workstage, controling calcium ion releasing, under the 2000 r/min shearing force,embedding germ body with sodium alginate and chitosan, finally get the tiny capsule.The benefit tiny capsule is as tiny as 10-6~10-8m。This craft lowly consumes energy, production is tiny, don't influence the tase of bean milk. The germs can keep high vitality for 3-4 months, the tiny capsule completely can satisfy to fermened soybean milk quality period request.Last, chose to use gelatin and CMC as the cstabilizer, for set-style Yogurt and stirred style yogurt. The addition measure of gelatin is 0.2%, to set-style Yogurt; and 0.3% CMC to stirred style yogurt, in the research. The fermented soybean milk by probiotics and probiotics tiny capsule have very high actual application value.
