In this paper, the stability of snow lotus healthcare wine was improved through stability-processing methods and hollow fiber ultra-filtration membrane. And test methods of the total flavonoids and Polysaccharides in the snow lotus healthcare wine were researched. The stability, 14 kinds of metal elements, aroma components and antioxidant before and after the treatment were evaluated and contrasted. The main contents are as follows:1. The total flavonoids and polysaccharides in the snow lotus healthcare wine were determined by spectrophotometry. The total flavonoids content was 98.20mg/100mL with the recovery rate of 96.2%-102.5% and RSD of 0.38%. The Polysaccharides content was 52.30mg/100mL with the recovery rate of 95.3%-105.1% and RSD of 1.86%.The method is reliable and reproducible.2. The factors that affect stability of the snow lotus healthcare wine were researched. And then dealt with wine through the stability-processing methods, and then filter it by PSF hollow fiber membrane. The optimal membrane technology was obtained, which as follows: operating pressure was 0.20 MPa, and MWCO of hollow fiber membrane was 30KDa-50KDa, while stability processing method was cold-treatment. During the optimal membrane technology, the rate of retained falconoid of 80.31%, while membrane flux was 7.52 L/(m2·h). The saturation temperature after treatment was 12.3℃,while the turbidity kept 3NTU during 7 days cold-hot enhancing and other physiochemical indexes complied with the requirements.3. Digested the sample through microwave digestion,contents of 14 kinds of metal elements in the snow lotus healthcare wine before and after ultra-filtration processes were determined by ICP-AES. The results showed that: the content of K was the highest, and it was 708.7μg/mL, followed by Na, Mg, Ca. Iron and brass content changed larger after the treatment, and contents other trace elements needed by the body, such as Zn, Se, did not change significantly.4. Extracted the aroma components in the snow lotus healthcare wine through solvent extraction, the relative contents of them were determined by GC-MS. The results showed that: there were rich aroma components in the snow lotus healthcare wine, and the kinds of aroma components detected in the snow lotus healthcare wine before and after stability treatment were 16 and 17 respectively, in which alcohol compounds both were the highest content. After stability treatment, the snow lotus healthcare wine generated new aroma component, with new aroma flavor.5. Antioxidant of the snow lotus healthcare wine was evaluated by pyrogallol autoxidation system, Feton system and hydrogen peroxide system, and compared with Vc. The results showed that: the snow lotus healthcare wine before and after stability treatment both had strong antioxidant,and antioxidant of the snow lotus healthcare wine after stability treatment was slightly lower than before.
