As one kind of well-known wines, Chinese red wine have been blemished by fake and shoddy products. There are two ways to distinguish Chinese red wine. The first one is by degusting, and the other one is by the method of chromatographic analysis. The former is time wasted and costly. As a result, it can't be used far and wide. So, find a simple and convenient method of red wine discrimination is very helpful for extinguishing the fake and shoddy products.In this paper, we study the construction spectrum of wine using three-dimensional fluorescence spectrum with chemometrics and apply it to the identification of wine and quality control.First of all, three-dimensional fluorescence spectrum technique was adopted to develop the fingerprints of wines, and 24 samples produced by seven different manufacturers were analyzed, the technique of principal component analysis was applied to investigate feature parameters of wines'three-dimensional fluorescence spectrum. The principal component analysis can achieve the correct category of wine.Then, the three-dimensional fluorescence spectrum of Chang Li cabernet in different years has been determined by PCA- pattern recognition. It can give better results because of the differences in spectrum.Finally the wine has been determined by parallel factor analysis combined with excitation-emission matrix. The main aim of this work was to detect the main fluorescent components in red wine and assign them to possible fluorescent compounds. The results are satisfactory when the estimated factors are three.Three-dimensional fluorescence spectroscopy technology can greatly improve the capabilities of red identify scientific and identification precision, and can be convenient applied conveniently in the quality identification of the red wine and industrial production.
