In this paper, the performance of gas permeation and anti -bacterial of fresh-keeping films for fruits and vegetables was studied. And the quality of Winter-Jujube packed with the film and stored at normal temperature was investigated.Firstly, CaCO3 and some else mineral fillers were used to modify the film, the effects of the adding amounts of filler on the permeation and mechanical property of films were studied. The results showed that as the amounts of CaCO3(undealed with coupling agents) increased, the gas permeation rate increased gradually, but the mechanical property decreased. Secondly, Ag-Zn series inorganic anti-bacterial was prepared and used to modify films. The effects of the adding amounts of anti-bacterial on the anti-bacterial activity were studied. The results indicated that when the adding amount is 1.5, the film has anti-bacterial activity, and the anti-bacterial rate is 60.0%. At last, the mineral filled film was used to pack winter-jujube, which stored at normal temperature. The effects of liquid preservation agents, pick method, packaging condition and ripeness degree on quality of winter-jujube were researched. The results indicate that the effect of liquid preservation agents is not salience, and the jujube without twig is not fit to be stored. The half-red jujube can be preserved with the mineral filled film for more than 18 days at normal temperature, and its edible rate amounts to 93. 4%, the good fruit rate amounts to 90.2%, which showed the film has good preservation function for half-red winter-jujube.
