The article generally introduces elements, characteristic, phylogeny, application domain and developed foreground of Vacuum Freeze-drying. We analyze the configuration and characteristic about the equipment of Vacuum Freeze-drying. We particularly expatiate technics approach of Vacuum Freeze-drying. Furthermore we make use of the theory of heat and mass transfer to analyze the process of sublimation-drying for the cucumber during vacuum freeze-drying and gain the time of Pre-freezing and sublimation-drying which is the number of the theory. With the help of the orthogonal experimentation we analyse the academic number of the Pre-freezing and sublimation-drying time, measure co-crystal temperature and the drying time. We handle the analysis of variance and the regression analysis to deal with the data of the experimentation about the drying time, gain the best scheme and the best model of the regression equation for the Vacuum Freeze-drying process of the cucumber. We check out the best scheme and the best result of the regression equation by the experimentation.
