This paper generally introduces elements, process, characteristic, phylogeny,application domain and developed status in china of Vacuum Freeze-drying. Andintroduces some measures to reduce the freeze-dried power. Modified the heatingsystem of the vacuum freeze-drying equipment And designed a system of onlineweighing. Then mathematically modeled for the material’s drying under the theory ofheat and mass transfer in the progress of vacuum freeze drying, and initially operatedthe progress of material’s vacuum freeze drying in the utilization of the theory of heatand mass transfer. It resulted in the pre-freezing and sublimation drying timetheoretically. Then carried out drying process experiments with the material of prawnand milk. In the experiment of prawn, Analysis of the variation of drying processwith the parameters such as radiation, temperature, vacuum, moisture content andtime. Then determine the best freeze-dried parameters. In the experiments of milk,Analysis of the variation of drying process with the parameters such as radiationtemperature, thickness of material, moisture content and time. And handle theanalysis of regression to deal with the data of the experiment which thickness are thebest. Then check out the regression equation and the best freeze-dried parameters.Finally, calculate theoretically the cooling consumption of the main equipments ofthe lyophilizer. Combined with the actual cooling consumption of the experiments,put forward the direction about energy-saving of refrigeration system of the vacuumfreeze-drying equipment.
