Heat pump technology applied in drying procedure can not only decrease the energy consumption, but also improve the quality of drying materials. In this paper, the drying material is the Chinese jujube of Fuping. According to its biological characteristic, the closure heat pump drying system with an assistant condenser is selected. Thermodynamic analysis based on the first law, the second law and the variable mass viewpoint are processed. In order to discover the interior moisture transfer mechanism influenced by the exterior conditions during drying, a simplified heat and mass transfer mathematic model using the thin layer theory is set up. The temperature distribution of the interior material during the drying process is simulated by using the ANSYS software. Four different drying schemes are done on the drying experiment unit. According to the results of simulation and experimentation, the optimum drying temperature of this drying material is comfirmed.
