In this study, Lactic acid bacteria were isolated from 62 samples of milk and milk products collected from the herdsmen's home in Durbet semi-desert and their biological properties were studied.The results revealed that 104 strains of lactic acid bacteria isolated reopectively belonged to 5 genus and 16 species.Lactobacillus: L.casei subsp.casei L.gasseri L.plantaruin L. coryniformis subsp. Coryniformis, L. panis L. curvatus; Bifidobacterium: B. bifidumB. breve;Lactococcus:L. lactis subsp. lactis L. lactis subsp cremoris; Enterococcus: E.avium E.feacium E.feacalis; Leuconostoc Lc.lactis Lc. mesenteroides subup cremoris Lc. oenos. in addition 21 strains can?t be iderdified in genus or species. The pecial flour of milk products in this area is related with Lactobacillus Bifidobacterium L. lactis subsp. lactis Besides DB4O?(high-temperature strain) the other lactis acid bacteria were medium-temperature strains and some strains could be used as atarts in milk products by milk fermentation teot.
