Recently, China' s kiwifruit estate area and production have grown rapidly, therefore its' plantation and fruit reservation are becoming increasingly important. This text mainly discusses the absence of environmental pollution, restoration and specific physiological properties in the reservation period of kiwifruit. The establishment of poly-cultural ecological systems and plantations allows a comparison of various fruit characteristics. By contrasting fruit appearance, fruit weight, appearance index, Vitamin C content, soluble solids, sugar content, total acids, flavor, fragrance and fresh color of the experimental plot with the reference plot, we can evaluate production, fruit quality and economical effects. Through the careful choice of suitable sites for planting, intercropping with suitable cash crops, emphasizing the use of organic manure, covering the row spacing with hydrated green manure, and physically supporting the fruit, results show that Jingkui, Miliang No. 1 and Hay ward varieties are most suited to hilly and upland areas of the southern Hunan, China. Conclusions can be drawn from specific physiological properties of kiwifruit in the period of reservation. Using 3 different temperature levels it was possible to gage the fruits' respiratory rate, C2H2, POD, PG, soluble pectin and cellulose. It can be concluded that POD and PG are closely related to the decay of the fruit while Cellulose and enzymes are not main physiological- factors of the fruits' decay.
