Three different varieties of wheat in development properties were treated by means of vernalization, deveranlization and cold acclimation, the analysis of the soluble protein content indicated: The content of the soluble protein increased, especially undergoing a process of "increasing-decreasing-increasing" during the metaphase and the end of vernalization. It showed that the physiological and biochemical reaction of cells strengthened during the vernalization. The changes of soluble protein content related to vernalization and the cold acclimation in winter wheat, but it related only to cold acclimation in spring wheat. By the analysis of SDS-PAGE, the results showed that a new protein (137KD) appeared at the end of vernalization, but disappeared after devernalization and cold acclimation in winter wheat. This showed that the new protein was highly related to the termination of vernalization; Content of the protein (46KD) increased gradually during the vernalizayion, and increased observably during the cold acclimation, this indicated that the 46KD protein related highly to the cold acclimation of wheat. The analysis on peroxidase (POD) and superoxide dismutaes (SOD) patterns and thseir activities showed prominent changes. The activities of POD increased during the vernalization, but decreased at the end of vernalization, conversely the activities of SOD increased after long-term cold adversity. The tow isoenzyrne' activities were high after cold acclimation.
