Honey is a kind of invigorant which is rich in a lot of nutrition. To raise the level of honey processing and supply the internal and overseas need, the paper study the process of the honey powder. The results are as following:The different sorts and quantity of assistant ingredients have different effect on the characteristic of honey solution, sense evaluation and drying efficiency of the product. Get a better match of the ingredients by experiment.Study on technics parameter of the powdered honey through orthogonal test of spray drying. The main index is the efficiency and hygroscopic capacity of powdered honey. The results show that concentration is the most important factor which work on the spray drying experiment. Then the air-in temperature is the second one. Through measuring, the main nutrition is not changed after the honey is processed.Study on the different sorts and quantity of assistant ingredients have different effect on the hygroscopic capacity, solution time, granularity of honey powder. And study on the relationship between humidity of the environment and hygroscopic capacity of honey powder. Get a regression equation to guide the manufacture and packing. Make a choice on the sorts of the packing material through calculating and doing experiment to testify them.The honey product has good quality and sanitation index.
