As a widely used engineering technology, spray drying is an integrated method for atomization and drying. This qualitative and experiential conclusions take effect on designing of spray drying tower and guiding the real manufacture. But nowadays some problems just like stiking to the wall and large consume of energy exist in the process of spray drying. And the understanding of inner process is not clear. This paper use Computational Fluid Dynamics(CFD) method to model and simulate the honey spray drying process base on the traditional operations. Build serials application models for honey spray drying operation in spray dryer. With the simulation and the analysis of fluency, the key boundary conditions and operation were found. This result is good to reduce the cost of testing and forecast the experiment result and provide the fine way to design the tower.When analyse the movement and evaporation of the mixture of honey in a spray dryer with rotary disc atomizer, a geometry model of spray dryer was set up in Gambit, and the models of material atomization, the droplet discrete phase, the hot continuous phase etc. were also set up for the calculation. We judged the distributing parameter with some experiment. The value is 1.76.After defining the boundary conditions of continuous phase and discrete phase, the experiments of different temperature of hot atmosphere, feed-in rate of honey mixture, rotator speed of rotary disk were taken to verify the model and fix it. After calculation, the figure of droplet path line on different rotator speed and the vaporing data of different temperature of hot atmosphere and feed-in rate were got. The laws of particles movement and evaporation were discussed in the figures. By using the uniform design method, the best operation conditions were also given: the best rotate speed of atomizer was 24000r/min, the best hot air temperature was 458K, mass flow rate was 2.90kg/h. On these conditions, the water content of powder is 3.2% and the 21.3% powder was got.
