Volvariella volvacea commonly known as the Chinese Straw Mushroom is an important edible fungus of the tropics and subtropics. Chilling injury has been found in this mushroom. Low temperature induced V. volvacea cell protein degradation and resulted in mycelium autoly2:ed. Try to understand the physiological change in cold autolysis of V. volvacea, cold shock proteins have been investigated. The results indicated:1 Compared with normal growth mycelium, three cold shock protein, named CspDZG1, CspDZG2, CspDZG3, were found in soluble proteins of Volvariella volvacea mycelium treated with low temperature(4 C) for two hours, and were isolated and purified followed by precipitation iractionation of (NH4)2SO4 and preparation electrophoresis.2 The isoelectric point of those proteins are 3.3, 4.4 and 4.4 respectively.3 The result of SDS-PAGE indicated that CspDZG 1, CspDZG2 are composed of one peptide with the molecular mass of 56KD and 54.5KD, CspDZG3 is composed of two subunits with molecular mass as 54.5KD and 68KD.4 After peptide were digested with 5. aureus V8 protease, the amino acid sequence of N-terminal was determined.
