In this paper Biochemistry and physiology of various of lotus root before-harvest and after-harvest were investigated, and the results as follow:Physiological properties of After-harvest lotus root, e'lian l,e'lian 2,e'lian 3,e'lian 4,e'lian 5, which were stored in the room at average 15 C, were studied.The L-value of scarfskin, sarcocarp, the content of protein, catalase activity of lotus root were in a tendency to decrease, especially, the content of moisture were always in a tendency to decrease. Decomposed rate, the content of rudcing sugar and ethanol, pectinase activity a of lotus are always in a tendency to increment, but respiration was in a tendency to increment first, then decrease with storage time, while Polyphenol oxidase activitivies of lotus were in a tendency to decrease first, then increase during storage.Physiological properties of e'lian 1, e'lian 2, e'lian 3, e'lian 4, e'lian 5 during growth period were investigated. During different growth period, PPO and catalase activities increased first , then decreased, and pectinase activities were in a tendency to decrease first, then increment, while Polyphenol and moisture are always in a tendency to decrease. In the same growth period, the PPO, pectinase, catalase activities were not same in different parts of lotus.The distribution of ployphenol in e'lian 1,e'lian 2,e'lian 3,e'lian 4,e'lian 5 , e'ou za 1, e'ou za 2, e'ou za 3,tai kong 3, xin yi,9217, 4-31, 4-2 were studied, and the content of polyphenol, catchin as well as flavon in various parts of lotus were tested, and the result was:The ployphenolic contents of various parts of lotus were different, which in lotus leaf was obvious higher than other parts, and the order was: lotus leaf>lotus flower>lotus stem>lotus root.Polyphenolic contents of various breeds were also obvious different, while big or small lotus leaf are not obvious difference. Polyphenolic content of various breeds and big or small lotus stem are not obvious difference. For a lotus subterranean stem, the ployphenolic content of the joint of lotus higher the other's location. The ployphenolic content in lotus root various were put in order: joint of lotus > tail part of lotus> middle part of lotus> head part of lotusThe content of catchin in lotus leaf are obvious higher than other's parts. The content of cathin in lotus various parts were put in order: lotus leaf> lotus root >lotus stem. The content of catchin of various breeds are obvious difference, big or small lotus leaf are not obvious difference. The content of various breeds and big or small lotus stem are not obvious difference. For a lotus root, the conten of catchin the joint of lotus higher the other's location. The content of catchin in lotus subterranean stem various were put in order: joint of lotus > tail part of lotus> middle part of lotus> head part of lotus.The content of flavone in lotus leaf are obvious higher then other's parts. The content of flavone in lotus various parts were put in order: lotus leaf> lotus flower>lotus stem > lotus root. The content of flavone of various breeds are not obvious difference, big or small lotus leaf are obvious difference. The content of flavone of various breeds and big or small lotus stem are not obvious difference. For a lotus root > the content offlavone of the joint of lotus higher the other's location.
