Study On The Crossbred Models And The Carcass Cutting Methods Of Mutton Sheep

The trail randomly selected health, similar body weight and twin lambs about 40 days old which were composed F1(D×H) of 30 lambs (male 13,female17), F1(S×H) of 30 lambs (male 14,female16) and small tail Han of 20 lambs (male 8,female12).They were disparted three groups with crossbred models and breed and studied comparatively in a period of 150d which were composed before trail 10d and trail 140d. In a period of whole trail, lambs were disparted two phases which were respectively from 40days old to 90days old and from 90days old to 180days old. When the trail finished, we randomly selected 6 lambs from every group which were slaughtered, cut and examined meat character. The dates showed that the weaning weight of F1(D×H) and F1(S×H) were respectively 24.14kg and 24.88kg was extremely significant greater than small tail Han sheep on 90 days old(P<0.01) and the body weight of F1(D×H) and F1(S×H) were respectively 44.8kg and 46.14kg was extremely significant greater than small tail Han sheep on 180 days old(P<0.01). We studied slaughter index of F1(D×H),F1(S×H) and small tail Han sheep by slaughter trial. The date showed the living weight, carcass weight, pure meat weight of F1(D×H) ,F1(S×H) were respectively 42.64kg,43.17;20.87kg,22.27kg and 15.58kg,16.33 were extremely significant greater than small tail Han sheep which was 34.01kg,15.93kg,11.53kg (P<0.01).The shoulder, back, loin-rump, thigh, breast and flap of F1(D×H),F1(S×H)were significantly greater than small tail Han sheep(P<0.05);but the neck, loin, fore shank and hind shank were not significantly greater than Han sheep(P>0.05). Therefore, we could considered that (1) the lambs of F1(D×H) and F1(S×H) were significantly greater than small tail Han sheep(P<0.01).(2) The growth and slaughter performance and carcass cuts of F1(S×H) were greater than F1(D×H). we suggested that it should firstly select Suffolk in utilizing crossing produce.(3)The body weight and carcass weight of 180 days old lambs of F1(D×H) and F1(S×H) accorded with mutton sheep develop country. So, two types of crossing models could utilized in high quality lamb meat of our country. With comparing domestic and overseas carcass cutting method of lambs, we brought forward the modified carcass cutting method based on our country cutting method. The method considered reasonable cutting method of mutton sheep main part. The conformation and specification of cuts accorded with congeneric production of internation. The method established foundation in order to realize high price of high quality cuts.
