In this paper, 'Jianshi'persimmon was treated with 5000ppm propylene(the analog of ethylene). The fruit firmness,TSS content ,respiration rate ,ethylene production ,the change of cell wall polysaccharide and cell wall degrading enzyme were investigated during the storage. The mechanism of propylene inhbiting persimmon fruit cell wall polysaccharide metabolism, ethylene inhbiting persimmon fruit softening were also discussed, which provide theoretical base for persimmon fruit storage. The results of study showed that (1)The degrading of protopectin and hemicellulose is the may reason of the softening of the persimmon fruit. (2) Propylene promoted the softening and the degrading of macromolecule of the persimmon fruit, let the fruit entirely soften 15 days earlier than CK. (3) Propylene treatment advanced the onset of climactic of ethylene production and respiration rate and advanced the peak. (4) Propylene treatment promoted the metabolism rate of cell wall component and macromolecule. The degrading of hemicellulose is the may reason of the rapidly softening of the persimmon fruit after propylene treatment. (5)It also enhanced the activities of PG and Cx and advanced the peak ,but PME was not the may reason in the rapidly softening of the persimmon fruit.
